Fig and caramelized onion whipped ricotta dip recipe
Even though most people have seen ricotta in lasagna or stuffed shells, this fluffy, creamy dairy product has many other uses.
1 tablespoon butter
2 tablespoons olive oil, divided
½ cup thinly sliced onion
1 clove garlic, minced
2 cups whole milk ricotta
½ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon fig jam, plus more for topping
1 tablespoon honey

Butter and 1 tablespoon olive oil in a medium skillet over medium-low heat. After butter melts and skillet heats, add onions. Allow onions to soften and brown for 30 minutes, stirring occasionally.

Garlic should be fragrant after 1 minute. After cooking, set aside onion mixture. Food processor ricotta, remaining 1 tablespoon olive oil, salt, and pepper. Whisk 1-2 minutes until fluffy.

Spoon whipped ricotta onto a plate. Caramelized onions, fig jam, honey. Spoon-mix everything gently. Optional: top ricotta with fig jam and thyme and serve with dippers.
